This oil is derived from hand picked Coratina olives that
are harvested whole and fresh at the time of maturation.
The olives are immediately transferred to the mill-stone
where they are ground and slowly cold pressed. It then
matures underground resulting in the extra virgin olive oil
Mosto, from the first raw press.
It is high in antioxidants and boasts a low percentage
oleic acid. The intense amber green color and herbaceous
taste will give a finishing touch to seasonal cuisine. This
unfiltered oil is best appreciated uncooked.
