This oil is presented with a deep green color. Initial bouquet hints at fresh grasses and unripe fruit. It is offered with a range of green fruit scents, slight floral scents, with a pleasant almond finish. Very harmonious oil with a broad and balanced taste, characterized by a medium fruity, and a level of bitter and medium-light piccate.

Excellent for cold seasoning refined fry, fish dishes, first courses with shellfish, white meats, carpaccio. The special scents of this oil, make it irreplaceable in enhancing the aroma of dishes, and medium-aged cheeses.
